Our study recently published in the American Journal of Clinical Nutrition also found that in Zimbabwean men, 300 g cooked yellow maize containing 1.2 mg β-carotene that was consumed with 20.5 g fat showed the same vitamin A activity as 0.38 mg retinol and provided 40–50% of the adult vitamin A RDA.

Biofortified yellow maize can help to reduce vitamin A deficiency in east and southern Africa where most people use maize as their staple food. The success of maize biofortification can be enhanced by collaborating with major seed companies. Seed companies may increase the availability and access to biofortified yellow maize. Efforts should be made to invited their participation in yellow maize biofortification early in the process rather than later.
